Cooking With K-cups- Classic Pumpkin Pie

We have enjoyed sharing our Monday coffee recipes so much that we have decided to expand our horizons with a new series of dessert and breakfast recipes! But, these aren't just any old recipes. We have hand selected easy to prepare, simple treats that pair well with, you guessed it...Kcup coffee! Not only will we include a delicious recipe but, we will suggest a Keurig Kcup coffee to enjoy with it for optimal taste.

Up this week...Classic Pumpkin Pie.

I can't get enough Pumpkin, I love it.  Most fall days you will find a pumpkin in my crockpot (yes I make everything with fresh pumpkin- no cans for me, thank you very much!) and a recipe ready and waiting to be made.  No matter how much I experiment with different dishes, I always go back to my favorite - good old fashioned pumpkin pie.  

Let's get to the recipe...

You will need:

2 C pumpkin puree

3 eggs

1 C brown sugar

1/2 t salt

1 t cinnamon

a dash each of cloves, nutmeg and ginger

1 C milk (regular or evaporated)

easy pumpkin pie recipe-Preheat oven to 450 degrees

- Combine all ingredients in a large bowl. Beat on low speed for 1 minute.

- Pour into pie crust. 

- Bake at 450 degrees for 10 minutes then lower temperature to 350 degrees and bake for an additional 45 minutes. 

Easy as pie (pun intended)! If you are counting carbs, you can make the same recipe in muffin tins with no crust, this creates portion control as well unless you are like me and eat 4-5 of them.  

 

I am huge fan of pumpkin and chocolate paired together. I dont know what it is but, the two flavor combined takes the taste to a whole new level.  I would recommend sipping a Donut House Collection Chocolate Glazed Donut with any pumpkin dessert!
