And the pumpkin recipes continue. I am an absolute pumpkin fool in the fall. My family has been inundated with pumpkin cookies, muffins, pie and the piece de resistance...pumpkin butter made with Keurig Kcup Apple Cider!
Let's get to the recipe...
You will need:
3 1/2 C pumpkin puree
2t vanilla extract
1 C brown sugar
2 T cinnamon
dash of nutmeg
dash of cloves
-Start by brewing your Apple Cider Keurig Kcup on the middle or lowest water setting of your Keurig brewer.
-Combine all ingredients in a sauce pan.
-Bring to a boil (this will happen very quickly).
-Reduce heat and let simmer for 30 minutes.
Transfer to a glass jar and you are ready to enjoy!
Pumpkin butter is not as good as apple butter it is WAY better in my humble opinion. The flavors are much more intense and absolutely tickle my taste buds! I enjoy spreading a generous amount on toast or adding it to my oatmeal.
