If you have been around awhile you have come to know (and hopefully love) our Monday K-cup recipes. I love fun, easy to make coffee drinks and desserts. They are a simple indulgence that can usually be made with ingredients already in your kitchen. There will be no running to the local coffee shop around here, no sir, we have Keurig’s in our kitchen that make these recipes easy peasy.
Up this week...Apple Cider Donuts.
Why is it that grocery stores know exactly where to put tempting treats, leaving us craving them long after we have left the store. Either that or shoveling one in our mouth the second we get to the car : )
My local grocery store left me dreaming of Apple Cider Donuts for the past few weeks. I have resisted the temptation to buy them only because I knew I could make them easily at home.
You will need:
4 1/2 C all purpose flour
1 C sugar
3t baking powder
1t baking soda
1/2 C buttermilk
1/4 C melted butter
2 eggs slightly beaten
-Combine all dry ingredients in a medium size bowl and mix with a whisk.
-Brew your Apple Cider Keurig Kcup on the lowest water setting of your brewer. The lowest water setting will produce about one cup of apple cider. Since you only need half a cup for this recipe, set the other half aside to dip your freshly made donut in- mmmmm!
-Combine all wet ingredients in a large bowl, stir well.
-Add the dry ingredients to the wet and mix until just combined.
-Refrigerate the dough for about 1 hour.
-Meanwhile heat 2-3 inches of oil to 375 degrees in a deep fryer, large frying pan or electric skillet.
-Roll the dough out on a floured surface to slightly more than 1/4 inch thick.
-Cut into donut shapes.
-Place in oil and allow to cook for 1- 1 1/2 minutes on each side.
-Drain on a paper towel.
-Coat with granulate sugar, powdered sugar or glaze.
Immediately break one in half and dip into freshly made Keurig Kcup Apple Cider. Then graciously accept all the love and gratitude your family will give you if you decide to share.
