Homemade Crumb Coffeecake Recipe

I decided to make crumb coffee cake this week for two reasons: 

1) My husband requested it.

2) Nothing goes better with Keurig Kcup coffee!

I adapted this recipe from the King Arthur Flour Bakers Companion, a huge book filled with amazing recipes that I am madly in love with! My version of their crumb coffee cake is simple to make with amazing results and it looks beautiful (if I do say so myself!). 

Let's get to the recipe...

You will need:

For the crumble

  • 2 C all purpose white flour
  • 1 C sugar
  • 1/2 t salt
  • 1 1/2 t cinnamon
  • 1 C plus 6 T melted butter
  • 2 t vanilla extract
For the cake
  • 8 T softened butter
  • 1 C sugar
  • 2 large eggs
  • 1 t vanilla extract
  • 1 C sour cream
  • 2 C all purpose white flour
  • 1/2 t baking soda
  • 1/2 t salt
  • 1 t baking powder
Start by making the crumble.

- Whisk together the flour, sugar, salt and cinnamon. Add the melted butter and vanilla extract. Stir until you have uniformly moistened crumb mixture.

Next make the batter.

- Cream the butter and sugar together until it is fluffy. 

- Add the eggs and beat until well combined.

- Beat in the vanilla and sour cream.

- In a separate bowl whisk together the dry ingredients. 

- Add the dry to the wet and incorporate.

- Pour the batter into a greased 8 inch round pie plate and bake at 350 degrees for 25-30 minutes.  

- Allow to cool on a rack and dust with powdered sugar. 

Easy Crumb Coffeecake Recipe
Here is a little flour tip that I am finally getting through my thick skull.  Always sift your flour. Even if it says pre sifted on the label, do it anyways.  The sifting allows your cakes and pastries to become light and fluffy.  If you are like me and despise using a classic sifter (I can never get that darn thing clean), use a metal sieve instead.  It is easier and provides the same results. 

This simple Crumb Coffeecake recipe is utterly delicious and looks like it was baked by a professional. The cinnamon and vanilla flavors will pair with virtually any coffee but, my first choice would be Donut House Collection Chocolate Glazed Donut.  This chocolate flavor of that particular Kcup will be enhanced by the cinnamon in this recipe and vice versa.
