Easy Jam Sweetheart Cookies

The Valentines festivities continue in my household with small but thoughtful hints of love and gratitude.  One of my favorite things to do is pack homemade heart shaped treats in lunch boxes the entire week before Valentines Day. Typically I do a simple heart shaped sugar cookie.  This year I wanted to be a bit more inventive and incorporate my homemade blackberry jam.  

The dough I used to make my Jam Sweethearts is reminiscent of shortbread with a slightly sweeter taste.  This is a great recipe to have on hand as it can be adapted to many different treats. These can also be made with your favorite sugar cookie dough.

Let's get to the recipe...

Preheat oven to 350 degrees.

You will need (for the dough):

2 1/2 C all purpose flour

3/4 C granulated sugar

1 C softened butter

1 egg yolk

1 T vanilla extract

1 T milk

dash of salt

- Start by creaming together the butter and sugar. 

- Add the egg yolk, vanilla and milk and beat until smooth.

- Add the flour and salt, mix until you form a smooth dough.

- Refrigerate for 30 minutes. 

- Roll out the dough on a lightly floured surface to 1/4 in. thickness.

- Cut out circles with a cookie cutter.

- Arrange the circled on a greased baking sheet.

- Cut small hearts out of  half of the circles.

- Bake for 12 minuted or until golden.

Now it is time to make the butter frosting...

You will need (for the frosting):

4T softened butter

1 C powdered sugar

1 T vanilla extract

1 T milk

- Beat the butter until smooth (I just do this with a fork).

- Gradually beat in the remaining ingredients.

- Frost the bottom half of the Jam Sweethearts generously (the part that does not have the heart cutout).

- Place a dollop of jam on top of the frosting.

- Put the heart cookies on top.

You now have adorable little treat to share with family and friends!  These also make a great homemade Valentines gift for neighbors and teachers!

I can not eat this cookie without thinking of biscuits and jam which of course goes hand in hand with Keurig K-cup tea.  I would recommend pairing Jam Sweethearts with a classic Earl Grey or English Breakfast tea but, only if you promise to speak with an British accent the rest of the day : )
