Homemade Keurig K-cup Iced Caramel Coffee Punch
If you have been around awhile you have come to know (and hopefully love) our Monday K-cup coffee recipes. I love fun, easy to make coffee drinks. They are a simple indulgence that can usually be made with ingredients already in your kitchen. There will be no running to the local coffee shop around here, no sir, we have Keurig’s in our kitchen that make these recipes easy peasy.

I came across this recipe this weekend and although I have not had the pleasure of trying it YET, Erin at Fivedollardinners.com states that it is “one of her favorite drinks ever!”. I immediately devised my Keurig Kcup twist on the recipe and this is what I came up with:
You will need:
4 Extra Bold Dark Roast Keurig Kcups
1/2 can of sweetened condensed milk
4 T caramel syrup
1 T vanilla extract
3-4 scoops of vanilla ice cream
Caramel drizzle to garnish
Brew the extra bold dark roast Keurig Kcup coffees on the lowest water setting of your Keurig brewer. Combine the coffee with the sweetened condensed milk in a medium sized bowl. Place in fridge to chill. Once cool stir in the vanilla extract and caramel syrup, add the ice cream and let it sit for a few minutes to melt slightly. Serve in mugs or glasses and drizzle caramel syrup on top.
This would be a great recipe for your next get together, what a delicious and beautiful dessert! I cant wait to try it, maybe tonight… I will need a little caffeine to make it until midnight to see the ball drop, that is WAY past my bedtime : )
