Keurig K-cup Recipe ~ Acai Berry Smoothie

I am always on the look out for snacks and treats that pack a powerful health punch but at the same time satisfy my daughters 10 year old taste buds.  If she detects the slightest taste or smell of health, it is a battle to the bitter end to get her do eat or drink said item.  I have found that if I add just a tinch of sweet taste, she falls for it every time.  Bran muffins?  Add a few chocolate chips and they are gone in minutes.  

The same applies to smoothies, if I keep them at least slightly sweet with the addition of a banana and perhaps a little squirt of whipped cream, she is none the wiser ; ) 

This all led to the invention of this weeks recipe...a super easy Acai Berry Smoothie!

Let's get to the recipe...

You will need:

1 Acai Berry Keurig K-cup

1 frozen banana

1 handful of frozen berries 

1/2 cup of plain or vanilla greek yogurt

-Start by brewing your Acai Berry K-cup on the lowest water setting of your Keurig brewer.

-Place the now brewed Acai Berry juice in the freezer for about 30 minutes. 

-Add the berries, banana and greek yogurt to a blender.

-Pour the now chilled Acai Berry juice into the blender.

-Blend to your desired consistency.

-Top with a few berries to make it look pretty : )

-Tell your kids it is a milkshake (its just a little white lie) or keep it all to yourself!


I prefer to make my smoothies quite thick, almost requiring a spoon.  Acai Berry smoothies are quite filling already but, try adding a handful of oats for an even more satisfied tummy!
