The dog days of summer are here. Afternoons are now blessed with abundant sunshine streaming in every crevice of my home. No longer are my 2pm breaks conducive to sipping a piping hot brew. By no means am I giving up that treasured midday pause, it just comes with ice and fans now rather than warm drinks and blankets.
Iced coffee is a no brainer, I ADORE a chilly brew but, some days I want a little less kick and a little more sweet. Enter...Snapple iced tea Kcups. Snapple offers three of their famous flavors in the Kcup format: peach, raspberry and lemon. Although I love all of them, I am partial to lemon because of its adaptability. I can add anything I think of to this iced Kcup pod to take the flavor up a notch and create a whole new twist. P.S. It's pretty darn good all on it's own too!
Today, I scanned my herb garden for a likely addition to my tea and set my eyes mint. Mint is one of my favorite herbs (second only to basil), I am a mojito type of girl but, today I am going with a lemon mint iced tea, made with my Keurig.
You will need:
- 3 sprigs of fresh mint
- 1 Snapple lemon tea Kcup
- ice
Start by muddling 1-2 of the sprigs of mint in the bottom of a large cup. I do not own any special tools for doing this, I simply rub the leaves together with my fingers and it works great!
Next cover the mint with a generous portion of ice.
Then brew you Snapple lemon iced tea Kcup directly into the cup containing the mint and ice. I recommend using the 6 ounce water setting and choose the "hot cocoa/other" option if you are using a Keurig 2.0.
Garnish with your remaining mint.
Lemon mint iced tea is one of the most refreshing combination I can think of. The addition of the mint really adds a whole new depth to this classic tea. If you prefer your mint in an adult cocktail this little baby with taste amazing with a splash of vodka!
