Cooking With K-cups~ Classic Buttermilk Pancakes

Basic Buttermilk Pancake recipeWe have enjoyed sharing our Monday coffee recipes so much that we have decided to expand our horizons with a new once a month series of dessert and breakfast recipes! But, these aren't just any old recipes. We have hand selected easy to prepare, simple treats that pair well with, you guessed it...Kcup coffee! Not only will we include a delicious recipe but, we will suggest a Keurig Kcup coffee to enjoy with it for optimal taste!

Up this week and oldie but a goodie...classic buttermilk pancakes.

What goes better with coffee than pancakes...nothing that's what!  Nothin' fancy here just a good old fashioned buttermilk pancake...like grandma used to make!

You will need:

  • 1 cup flour
  • ¼ cup buttermilk powder
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 egg
  • 1 cup water
  • 3 tablespoons oil

In a medium bowl, mix together the flour and buttermilk powder. Add in the baking soda, sugar, baking powder, and salt.

Add in the egg, water, and oil. Mix together with a whisk until all ingredients are incorporated. Do not overmix, some lumps are ok in the batter.

Warm up a griddle or a greased frying pan. Drop the mixture by 1/3 cup measurements onto the hot griddle. Flip to the other side when the mixture starts to bubble. Cook each side until golden brown.

I would like to recommend two Kcup coffees to enjoy with your delicious buttermilk pancakes.  First and foremost, Golden French Toast would provide an amazing taste combination but, unfortunately it is not always around (why Green Mountain why?!). Don't worry Donut House Collection Cinnamon Roll will do the trick just as well!
