Cooking With K-cups ~ Spicy and Sweet Chai Cupcakes

Chai Cupcake recipe

Chai is one of my very favorite K-cup teas, the spicy and sweet taste collision is right up my alley!  Chai consists of a unique combination of spices that generally includes cinnamon and none other than...black pepper!  Wrap that in a cozy blanket of warm milk and you have a delicious Chai Latte! 

I have fallen so in love with the flavor explosion that I wanted to translate it to a dessert of some sort, enter...chai cupcakes! I adapted this recipe from the Taste of Home Bakeshop Favorites cookbook, it  takes a basic vanilla cupcake and turns up notch with the simple addition of a small combination of spices that you probably already have in your kitchen.

Let's get to the recipe...

You will need:

1/2 tsp. cloves

1 tsp. nutmeg

1 tsp. cinnamon

1/8 tsp. pepper

1/2 cup softened butter

1 cup sugar

1 egg

1 tsp. vanilla extract

1 1/2 cups all purpose flour

1 1/2 tsp. baking powder

1/4 tsp. salt

2/3 cup milk

 

Easy Chai Cupcake recipe

- Preheat your oven to 350 degrees

- Start by combining the cloves, nutmeg, cinnamon and pepper in a small bowl, whisk them together well. 

- In a large bowl cream the butter and sugar together until light and fluffy and then beat in the vanilla and egg.

- In a medium bowl whisk together the flour, baking powder, salt and 2 tsp. of the spice mixture, mix well.

- Slowly add to the creamed mixture alternating with the milk. Add a little dry, add a little milk, beat and repeat until well combined.

- Line a muffin tin with paper liners and fill 2/3 of the way full with the batter.

- Bake for 20-25 minutes or until golden brown and a inserted toothpick comes out clean. 

- Cool on a wire rack for 10 minutes. 

Time to make the frosting...

You will need:

6 tbsp. softened butter

3 cups powdered sugar

1 tsp. vanilla extract

4 tbsp. milk

cinnamon

Unique Chai Cupcake recipe

- Beat the butter in a large bowl until it is creamy and fluffy.

- Beat in the powdered sugar, vanilla, milk and the remaining spice combination until completely combined and has a creamy texture. 

- Pipe the frosting on the cupcakes and sprinkle with cinnamon. 

These cupcakes are unique and delicious!  They are quite sweet, next time around I might go a little lighter on the frosting.  

Flavor abounds in chai cupcakes, there is absolutely no reason to add anything more to the mix with the K-cup coffee you choose to enjoy with this dessert. I would recommend a nice easy to drink medium roast coffee such as Vermont Country Blend or Folgers Classic Roast
