It is summer salad season, not only so we look good in those bikinis (who am I kidding, I wear an old lady full coverage suit but, still want to look good in it!) but also, who wants to heat up their kitchen making a hot meal in these dog days? Not me, that is for darn sure.
I have been on a spinach kick, I cant get enough of it- weird, I know. I absolutely love any and all vinaigrette dressings but, I am especially fond of the raspberry variety. As always, I was determined to make my own, especially with the newest member of my garden- a beautiful raspberry bush!
Let's get to the recipe...
You will need:
1/2 cup balsamic vinegar
1/3 cup olive oil
1 cup fresh raspberries, washed
2 1/2 tablespoons white sugar
1/4 teaspoon salt
Combine all ingredients in your food processor or blender until smooth. Refrigerate until ready to serve.
*Tip: Give it a taste before you empty your food processor or blender. If you need more sugar, add some now.*
That's it! No kidding, it is truly oh SO easy!
By the way if you are thinking that the spinach salad looks beautiful, I completely agree, here is how it is made...(didn't know you would be getting a two for one deal on recipes today did ya?)...
Salad Ingredients: (Use amounts needed for the size salad you want to make. This is up to you and what you like most!)
Spinach, washed and spun dry
Red onion, diced
Canned mandarin oranges, drained
-Lay spinach on a large platter. Toss in onion, raspberries, and oranges.
-Just before serving, so they don't turn brown, slice the avocado and place on top.
-Serve with Raspberry Vinaigrette Dressing of course.
The tartness of the dressing is a perfect match with the sweet fruit in this salad!
P.S. I would highly recommend pairing this amazing salad with Snapple Raspberry Keurig K-cup iced tea, it is pretty much a match made in heaven!
